Seafood Chowder

“When the cold weather hits, here’s a recipe to warm you up!”
Ingredients:
2 1/2 pounds haddock, cod, scallops or any seafood
4 medium potatoes, peeled and diced
a few chopped celery leaves
1 clove garlic, peeled and crushed
1/2 cup butter
3 onions, chopped or diced
2 1/2 teaspoons salt
2 cups boiling water
1/2 cup clam juice
2 cups light cream
1/4 cup olive oil
Directions:
1. Combine all but the cream in a casserole dish and bake at 325 degrees for 1 hour.
2. Transfer stock to a crock pot and cook on low heat until ready to serve.
